回不去了

Anzac Day, 25 April, Australia's most important national occasion. It marks the anniversary of the first major military action fought by Australian and New Zealand forces during the First World War.


Oat and Cornflake Cookies






Ingredients : 125g unsalted butter, 50g pure icing sugar, 50g soft brown sugar, 1 egg, 50g rolled oats, 50g sultana, 50g dried cranberries, 100g crushed corn flakes, 70g milk, 100g wholemeal flour, 80g plain flour, 50g self raising flour, 20g corn flour, pinch of salt and 1/2 teaspoon vanilla essence

Method :

1. Preheat oven to 160 deg C
2. Cream butter and sugar in an electric mixer until light and creamy.
3. Add the egg and vanilla essence and beat well.
4. Add sifted flour, salt and all remaining ingredients, mix with a spatula until a soft dough forms.
5. Mould one tablespoon cookie mixture into a flat round, place on a baking tray lined with non-stick baking paper, repeat with remaining mixture.
6. Bake for 15 to 20 minutes or until light golden.

Fruity, Nutty and Spiced Hot Cross Buns

Good Friday 2014

Hot Cross Buns







 A. Overnight Sponge Dough Hot Cross Buns

To make overnight sponge dough : 215g Bakers flour, 130g cold milk and 2g instant yeast

To make main dough : 95g Bakers flour, 2 teaspoons mixed spice, 1 teaspoon ground cinnamon, 15g cold milk, 1 egg,  45g caster sugar, pinch of salt, 5g instant yeast and 45g unsalted butter

Sultana, cranberry and crushed walnuts

Egg Wash

To make Crosses : 6 tablespoons plain flour and 5 tablespoon water ( Combine flour and water to make a smooth paste and pipe crosses over buns.)

Glaze : 2 tablespoons sugar and 2 tablespoons water ( combine sugar and water in a saucepan and boil until sugar is dissolved. Brush over tops of buns )

OR

B. Tangzhong Hot Cross Buns

To make Tangzhong : 50g Bakers flour and 125g water and 125g milk

To make main dough : 350g Bakers flour, 2 teaspoons mixed spice, 1 teaspoon ground cinnamon, 40g caster sugar, pinch of salt, 1 egg, 65ml milk, 65ml light cream, 7g instant yeast, 120g Tangzhong and 40g unsalted butter

Sultana, cranberry, glazed cherry and crushed walnuts

Egg Wash 

To make Crosses : 6 tablespoons plain flour and 5 tablespoon water ( Combine flour and water to make a smooth paste and pipe crosses over buns.)

Glaze : 2 tablespoons sugar and 2 tablespoons water ( combine sugar and water in a saucepan and boil until sugar is dissolved. Brush over tops of warm buns )

Ingredients :
A. 3 egg yolks, 1 whole egg, 50g vegetable oil, 65g self raising flour, 10g rum, 8g cocoa powder and 11/2 tablespoon hot water

B. 3 egg whites, 60g pure icing sugar and a few drops of lemon juice

C. light cream to serve

Beurre Bosc Pears

Beurre Bosc Pears are great dessert pears .....


Red wine poached pears with vanilla ice-cream and walnut crumbs




Ingredients :

3 Beurre Bosc Pears

For Poaching Liquid : 11/2 cups red wine, 1 cup water, 2 star-anise, 3 cloves, 1 cinnamon quill, lemon peels and 3 table spoons sugar

Vanilla ice-cream and walnut crumbs to serve

so yummy .....

Guilt Free Mexican Buns, 墨西哥面包




For the dough : 
220g Bakers flour, 50g plain flour, 25g caster sugar, pinch of salt, 5g dried yeast, 1 egg, 130g milk, 50g overnight sponge dough and 20g butter                          

For the topping :
30g butter, 30g icing sugar, 30g egg and 30g plain flour
