Banana and Cinnamon Muffins
Donna Hay's recipe:
300g plain flour, sifted
1 teaspoon ground cinnamon
2 teaspoons baking powder, sifted
165g caster sugar
240g sour cream
2 eggs
1 teaspoon finely grated lemon rind
80ml vegetable oil
2 large chopped banana
1. preheat oven to 180 deg C, place the flour, ground cinnamon, baking powder and sugar in a bowl and stir to combine.
2. place the sour cream, lemon rind, eggs and oil in a bowl and whisk until smooth.
3. add the sour cream mixture to the flour mixture and stir until just combined.
4. sprinkle over the chopped banana and stir once, spoon the mixture into non-stick muffin tins and bake for 12 minutes or until cooked.
