噢!这一秋季 .....

Different culture groups of people crave for different type of food. A good Sunday roast is just as important as a good laksa, dumplings, beef wellington, pizzas and etc for others.

I used to make Sunday roasts while i was working as a cook in the retirement village. I made roast pork, roast beef, roast lamb and roast chicken for the elderly residents if my shift was on weekends.

Today I made roast chicken with roast vegetables for my old man which I have promised him quite sometimes ago. Till today I still owe him a good spiced lentil soup and a ham hock pea soup.




In order to speed up the roasting time and cook the chook evenly I butterflied it before roasting.

Ingredients used for roasting the chook : sweet paprika, garlic, chilli flakes, garlic, olive oil, lemon zest, lemon wedges, salt, pepper and my beautiful home grown rosemary.

I used the pan juice to make gravy.

The left over meat can be used for sandwiches, wraps, risotto, pie, quesadillas, pasta .....

噢!这一秋季,总算有一些值得回忆......
