Mushroom Soup
Ingredients : onion, garlic, butter, olive oil, fresh mushrooms ( cup, flat, button or portabella ), plain flour, milk, sour cream, basil leaves, continental parsley, salt and pepper
Method :
1. Heat butter and olive oil in a saucepan over a medium heat, add diced onion and garlic, cook for about 5 minutes or until soft.
2. Add sliced mushrooms and continue to cook until tender, stir in flour and cook the mix for about 1 minute.
3. Add chicken stock, bring to the boil, reduce heat and simmer until soup is slightly thickened. Stir in milk and simmer.
4. Blend soup until smooth.
5. Season with salt and freshly cracked black pepper.
6. Serve soup with chopped parsley, basil leaves, sour cream and croutons.
