Vanilla yoghurt cake with candied orange and lemon rind
Ingredients used for making the cake : A) 50g butter, 45g self raising flour, 25g corn flour, 4 egg yolks, 1 lemon zest, 1/2 orange zest, 150g vanilla yoghurt and 50g fresh milk B) 4 egg whites, 50g caster sugar and pinch of cream of tartar
Ingredients used for making the candied lemon and orange rind : 1 lemon, 1 orange, 50g sugar and 300ml cold water
This cake needs to be steam baked ( water bath ) in a low temperature at about 165 to 170 deg C for about 50 minutes as too high a temperature will cause the cake to shrink.
This cake is soft, light and rich in lemony flavour. Just cannot resist eating it.
