人间好时节

My Chicken and Potato Curry Two Ways

I often cook curries when the weather is cold. Curries are such beautiful comfort food in the cold winter days. My normal practice is, I would cook extra potatoes in the curries and use the left over potatoes for making curry puffs. 

Curry puffs are such down-to-earth food. Frozen, they can be reheated days and weeks later. And when they are reheated one can detect their delicious smell from miles away.

I even cook chicken curries at my work place, the kids from one year old to five year olds love it very much..... they keep saying to me ..... more, more, I want more .....

I make 16 curry puffs today, 6 for Ling Chew, 4 for my FIL and the rest ...... hmmmm ....

日日是好日

Today's is my old man's birthday ...... we have a deal .....

1. have to make him two half boiled eggs.
2. have to make him a nice cheese cake.
3. have to treat him nicely for the whole day and say "YES" to everything he asks, as well ..... and extra bonus .....
4. I make him a yummy chicken casserole with red wine, tomatoes, root vegetables and herbs .....

Baked Cheese Cake 


Donna Hay's Baked Cheese Cake Recipe

Ingredients :

1. Base
3/4 cup plain flour, 1/4 cup caster sugar, 1/3 cup almond meal and 90g butter

2. Filling
330g cream cheese, softened, 500g fresh ricotta cheese, 4 eggs, 11/3 cup caster sugar, 1 tablespoon lemon rind. 1/4 cup lemon juice, 1/2 teaspoon vanilla essence, 11/2 tablespoons cornflour and 11/2 tablespoon water


Method:
1. Preheat oven to 150°C.

2. To make the base, place the ground almonds, flour, sugar and butter into a bowl. Rub mixture with your fingertips until it forms coarse crumbs.

3. Line the base of a 20cm spring form tin with non-stick baking paper. Place the base mixture in the tin and press gently with fingers until even and then smooth out with the back of a spoon. Bake for 15 minutes or until light golden, set aside.

4. To make the filling, place the cream cheese, ricotta, eggs, sugar, lemon rind, juice and vanilla in a food processor. Combine the cornflour and water until smooth and add to the cheese mixture. Process the mixture until smooth.

5. Grease the sides of the cake tin with a little butter and then pour the filling over the base. Tap lightly to remove any air bubbles. Bake for 1 hour. Turn the oven off and stand the cake in the oven for 1 hour, leaving the door closed. Refrigerate until cold and serve with fresh berries.

赏心悦目


我喜歡回顧, 是因爲我不喜歡忘記。我總認爲,在世間,有些人、有些事、有些時刻, 

似乎都有一種特定的安排, 在當時也許不覺得,但是在以後回想起來,卻都有一種深意。

Vanilla Cup Cakes

Donna Hay's recipe :

185g plain flour, sifted
3/4 teaspoon baking powder, sifted
220g caster sugar
125g butter, softened
2 eggs
180 ml milk
1/2 teaspoon vanilla extract

1. preheat oven to 160 deg C, place the flour, baking powder, sugar, butter, eggs, milk
and vanilla in the bowl of an electric mixer and mix to combine.
  
2. spoon mixture into muffin tins lined with paper cases and bake for 20 to 25 minutes or until cooked.

3. ice as desired.

Simple Life VS Simple Muffins

Muffins are fast and so easy to make.  They are great for lunchbox or a snack anytime.

Banana and Cinnamon Muffins



Donna Hay's recipe:

300g plain flour, sifted
1 teaspoon ground cinnamon
2 teaspoons baking powder, sifted
165g caster sugar
240g sour cream
2 eggs
1 teaspoon finely grated lemon rind
80ml vegetable oil
2 large chopped banana

1. preheat oven to 180 deg C, place the flour, ground cinnamon, baking powder and sugar in a bowl and stir to combine.

2. place the sour cream, lemon rind, eggs and oil in a bowl and whisk until smooth.

3. add the sour cream mixture to the flour mixture and stir until just combined.

4. sprinkle over the chopped banana and stir once, spoon the mixture into non-stick muffin tins and bake for 12 minutes or until cooked.
