Homemade Granola

Homemade Granola



Ingredients :
A. Golden syrup, ground cinnamon, lemon zest and rice bran oil
B. Raw almonds, raw walnuts, rolled oats, sesame seeds, sunflower seed, pumpkin seeds and chia seeds
C. Dried cranberries and golden raisins

Method :
1. Preheat oven to 160 deg C. Line an oven tray with baking paper.
2. Combine golden syrup, rice bran oil, cinnamon and lemon zest in a small saucepan and cook over a low heat for a few minutes or until loosened in consistency.
3. Put remaining ingredients except cranberries and raisins in a bowl, pour over golden syrup mixture and mix to coat.
4. Spread mixture onto tray and bake for 15 minutes, stirring after 5 minutes to toast evenly. Remove from oven and set aside to cool on tray. 
5. When cool, stir in cranberries and raisins. Store in an airtight container.

Sprinkle granola over yoghurt, porridge, ice-cream or serve with milk, top with fruit salad......

Sesame bread : 300g bakers flour, 30g black sesame powder, 5g dried yeast, 30g sugar, 3g salt, 60g overnight sponge dough, 185g water, 25g butter and 30g toasted black and white sesame seeds

Coffee flavour bread : 250g bakers flour, 30g sugar, 3g salt, 5g dried yeast, 50g overnight sponge dough, 1 egg, 90g fresh milk and 40g butter

Overnight sponge dough : 100g bakers flour, 60g water and 1/4 teaspoon dried yeast

1. For the bread loaves
Ingredients : 
A. 270g Bakers flour, 130g wholemeal flour, 12g caster sugar, 6g salt, 7g dried yeast
B. 80g overnight sponge dough, 2 teaspoons honey, 260g water
C. 20g butter
D. 80g seeds, nuts and sultana

2. For the bread rolls
Ingredients :
A. 200g Bakers flour, 100g wholemeal flour, 15g brown sugar, 3g salt, 5g dried yeast
B. 60g overnight sponge dough, 1 teaspoon honey, 190g water
C. 20g butter
D. 70g seeds, nuts and sultana

Ingredients for sponge dough : 100g Bakers flour, 60g water and 1/4 teaspoon dried yeast ( mix all ingredients in a bowl to form a dough, proof for 30 minutes, cover and refrigerate overnight or up to 48 hours. )

Layered Crepe Cake

Decadent layered crepe cake, you only need a small slice.

Mocha layered crepe cake with Cream Chantilly and Strawberry Coulis



Ingredients : 
For the crepes :130g plain flour, 2 eggs, 350g fresh milk, 25g melted butter, 1 tablespoon green tea powder, 45g caster sugar and pinch of salt

For the cream : whipped cream, sugar and vanilla essence

For the coulis : strawberries, sugar and lemon juice

Method :
1. In a bowl combine flour, pinch of salt, sugar and green tea powder. In a separate bowl, whisk together eggs, fresh milk and melted butter. Make a well in the centre of the flour mixture and whisk in liquid to make a batter. Pass batter through a sieve and refrigerate for about an hour.
2. Place strawberries, sugar and lemon juice in a sauce pan and cook until thick.
3. To cook crepes, heat a non stick pan over low heat, brush pan with a thin layer of cooking oil and pour in enough crepe mix to just cover base of pan. Cook for about 1 minute each side. Repeat with rest of mix.
4. For the cream, combine all ingredients in a bowl and whip until soft peak forms.
5. To assemble, lay a crepe on a plate and spread with cream or strawberry coulis. Repeat with the rest of crepes, cream and coulis.
6. Refrigerate crepe cake for about 2 to 3 hours before cutting.

经过几番斟酌, 最爱以下这款没有添加椰奶且份量合我心意的食谱, 糯糯软软的糯米糍, 超好吃。

Ingredients :
For the coating : 50g fried rice flour
For the fillings : roasted peanuts, roasted black and white sesame seeds, caster sugar, a teaspoon of peanut butter (optional) and pinch of salt
For the dough : 125g glutinous rice flour, 1 1/2 tablespoons tapioca flour, 30g sugar and 180 to 190g water, cooking oil for greasing the pan

QQ九层糕

紫萝卜的紫, 绿茶的绿, 椰奶的乳白, 成就了此款紫绿白间隔的九层糕。

Ingredients
A. For the sugar syrup : 340g water, 140g caster sugar, 200g ayam brand coconut cream and 140g fresh milk
B. For the batter : 200g tapioca flour and 70g rice flour
C. For the colourings : 1 1/2 teaspoons green tea powder and juice from 2 purple carrots

Method :
1. Place water and sugar in a sauce pan and bring to a lightly boil or until sugar dissolves. Add in coconut cream and fresh milk. Mix well.
2. Whisk in rice flour and tapioca flour. Strain mixture through a sieve. Divide mixture into three portions.
3. Add colourings to two portions of the mixture and leave one portion with original colour.
4. Place a greased tin in a steamer and heat up for about 3 minutes. Pour in first layer of the batter into the hot tin and steam for about 3 minutes on high heat. Making sure the layers are set before adding the next layer of batter. Repeat until all layers are done. 
5. Steam the kuih for a further 12 minutes.

A. 200g cream cheese, 170g milk, 60g butter and 30g caster sugar 
B. 4 egg yolks, 50g plain flour, 20g corn flour, 50g milk, 1 table spoon lemon juice and lemon zest
C. 4 egg whites, 100g caster sugar and 1 teaspoon lemon juice
