芋头紫薯淡奶油馅蛋糕
在蒸熟的芋头里混合了紫薯泥, 再加入打发的淡奶油和少许的糖粉, 制作了此款淡紫色的芋头忌廉蛋糕馅。
Ingredients for taro cream : 100g taro mash, 50g purple sweet potato mash, 25g pure icing sugar and 150g whipped cream.

咖啡与绿茶花式饼干

咖啡与绿茶花式饼干
Ingredients : 120g unsalted butter, 90g pure icing sugar, 45g egg white, 150g plain flour, 15g corn flour, 70g almond meal, instant coffee/green tea powder and hot water
Method :
1. Cream butter and sugar until light and fluffy.
2. Gradually add the egg white and beat thoroughly.
3. Fold in the sifted flour mixture until just combined.
4. Add the coffee paste / green tea paste(combine instant coffee/green tea powder with hot water and mix well) into the mixture. Mix until the mixture is smooth.
5. Spoon the mixture into a piping bag fitted with a star nozzle and pipe into desired patterns on lined baking trays.
5. Bake for about 10 minutes at 180 deg C.

云石牛油蛋糕
嗅不到年味的除夕日。
Ingredients : 250g unsalted butter, 150g caster sugar, 4 eggs, 210g plain flour, 20g corn flour, 1 teaspoon baking powder, 3 tablespoons fresh milk, 20g cocoa powder and 4 tablespoons hot water
Method :
1. Cream the butter and sugar together until pale and fluffy.
2. Add eggs one at a time, mixing well between each addition.
3. Sift plain flour, corn flour and baking powder together and fold in the flour mixture a little at a time to the creamed mixture, alternating with the fresh milk.
4. Divide mixture into two portion, add cocoa paste (mix cocoa powder and hot water together) to one of the portions.
5. Spoon mixture into a lined tin and bake for about 45 minutes at 170 degree C.
I have not been baking butter cakes for such a long time, this cake is moist and delicious - it is good eaten with a cup of coffee and makes a great treat for a new year get-together.

Ingredients for the dough : 250g unsalted butter, 50g pure icing sugar, 2 1/2 egg yolks, 320g plain flour, 50g milk powder and pinch of salt
Ingredients for the filling : fresh pineapple, sugar, cinnamon stick and cloves

农历年首发年饼。
Ingredients : 90g unsalted butter, 90g pure icing sugar, 1 egg, 170g plain flour, 25g almond meal, 30g cocoa powder, 1 tablespoon fresh milk and 100g almond flakes
Method :
1. Cream butter and icing sugar until light and fluffy, beat in egg until well combined.
2. Stir in sifted dry ingredients, in two batches, and then add the milk.
3. Add almond flakes to the mixture.
4. Divide the mixture in half, roll each half into a log, wrap each log in baking paper and refrigerate for about 1 hour or until firm.
5. Cut the logs into 1 cm slices and place them on lined oven trays, bake for about 25 minutes at 150 deg C.
Method :
1. Cream butter, icing sugar and lemon zest until light and fluffy, beat in egg until well combined.
2. Stir in sifted dry ingredients, in two batches.
3. Add chopped craisins to the mixture.
4. Divide the mixture in half, roll each half into a log, wrap each log in baking paper and refrigerate for about 1 hour or until firm.
5. Cut the logs into 1 cm slices and place them on lined oven trays, bake for about 25 minutes at 150 deg C.
Ingredients : 375g Sanitarium's natural peanut butter (crunchy), 60g rice bran oil, 70g pure icing sugar, 220g plain flour and 50g corn flour, 1 egg yolk for glazing
Method :
1. Combine all ingredients in a bowl and mix until well combined.
2. Roll level tablespoons of mixture into balls and place on lined oven trays and flatten slightly. Bake for about 25 minutes at 150 deg C.

4. Divide the mixture in half, roll each half into a log, wrap each log in baking paper and refrigerate for about 1 hour or until firm.
5. Cut the logs into 1 cm slices and place them on lined oven trays, bake for about 25 minutes at 150 deg C.
